Stir Fried Tofu with Peanut & Chilli Sauce
This is a classic vegetarian starter or fried Tofu with a spicy sauce.
Preparation:
- Pat away any moisture from the Blue Dragon Firm Silken Tofu (bean curd), using kitchen paper.
- Heat the oil in a large wok or saucepan until very hot. Cook the tofu, in batches, for about 5 minutes, or until golden and crispy.
- Remove the tofu with a slotted spoon, transfer to kitchen paper and leave to drain.
- To make the sauce, mix together the crunchy peanut butter, Blue Dragon Sweet Chilli Dipping Sauce with Kaffir Lime, Blue Dragon Coconut Milk, tomato puree and chopped peanuts in a bowl. Add a little boiling water if neccessary to achieve a smooth consistancy.
- Transfer the crispy fried tofu to serving plates and serve with the peanut and chilli sauce.

Cook the peanut and chilli sauce in a saucepan over a gentle heat before serving, if you prefer.
