Pork Satay with Cucumber
This is a really low fat satay recipe, that is great served in the summer as a barbeque treat.
Preparation:
- Soak 16 bamboo skewers in water, to prevent burning.
- Cut the pork into 16 slices, about 1cm wide. Lay on a board, cover with cling film and bash lightly with a rolling pin to flatten.
- Mix the soy sauce with the oil, lime juice, ground spices, garlic and salt. Coat the pork in the spicy marinade and leave in the fridge for 30 minutes.
- Meanwhile, slice the cucumber lengthways, using a vegetable peeler. Mix the peanut sauce ingredients together in a bowl.
- Thread the pork onto the skewers and grill for two minutes on each side or until cooked through. Serve over the cucumber slices, with the peanut sauce and lime wedges for squeezing.

If you have no lime, a lemon will achieve a similar zesty flavour... more
Try to keep the chicken pieces small and of an equal size for even, quick cooking.
If you are using wooden skewers soak them in water for at least 30 minutes beforehand. This is necessary to stop skewers from burning and meat from sticking to the skewers.
