Lychee Sorbet

This is so simple - and it seems unbelievable that something so delicious can be made from just two ingredients.

Preparation:

  1. In a food processor, pulse the lychees to a puree. Pass these through a fine mesh strainer, pressing to extract as much juice as possible.
  2. Mix this juice with the reserved syrup and add lime juice to taste. In a medium pot, heat this sugary liquid in 240 ml of water until all the granules are dissolved.
  3. Place in an ice cream machine and follow the manufacturers instructions. OR alternatively, place in freezer-proof plastic tub and freeze, forking through the mixture every hour or so to disperse the ice crystals. The correct texture should be achieved after 4-6 hours.
