Spinach, Blue Cheese and Pancetta Salad with Almonds

A delicious light salad with an Oriental touch, perfect for a light lunch

Preparation:

  1. In a frying pan over a medium to high heat, fry the pancetta until crispy. Leave to cool slightly.
  2. In a clean, dry plan, briefly toast the almonds until golden brown. Roughly chop.
  3. In a salad bowl, add the pancetta, almonds and gorgonzola to the spinach.
  4. For the dressing, mix the remaining ingredients together and dress the leaves.
  5. Divide between two bowls to serve.

Useful tip:

Omit the pancetta for a vegetarian alternative.
