Wood Ear Fungus


Wood Ear Fungus

The frilly, brownish clumps of translucent tissue resemble billowing clouds. It is mostly sold dried and can be reconstituted by soaking in water. It is prized in Chinese cuisine for its crunchy texture and therefore is added to dishes towards the end of cooking. Having no flavour of its own it absorbs the seasonings it is cooked with. Also known as: black fungus, cloud ear or wood fungus.
