Udon
Wheat noodles which may be round, square or flat. Udon come in a wide variety of lengths and thicknesses and are usually available fresh in the refrigerators of Japanese ingredient stockists. One variety, hiyamungi, round and slender (though not quite as slender as somen), is served cold.
