Steamed Buns
These used to be the staple 'fan' of North China when rice was regarded as a luxury for the better-off. Made from a wheat flour and water dough, they are pinched together at the the top around a filling. They are usually filled, either sweet or savoury, and this is indicated by a coloured dot on the top of the bun (a red dot will appear if it is sweet - supposedly to resemble a woman's breast). Also known as: mantou (Chinese).
