Soy Sauce, Light


Soy Sauce, Light

Usually labelled `superior soy`, it is saltier and will not darken food. Ideal for soups, seafood, vegetables and dipping sauces. Since most labelling does not state which type of soy the bottle contains, to distinguish between dark and light soy, tip the bottle and look at the neck. If it is only lightly tinged with colour (a pale gold) it is light. If the glass is stained with a rich brown and takes a while to clear, it is dark.
