Rice Vinegar

Rice Vinegar

Made from fermented (white) rice it is popular in China, Japan and Korea. Spirit or wine vinegar watered down will make an 'okay' substitute, but remember Chinese and Japanese rice vinegars are sweeter and milder than their western counterparts. Traditionally made from rice cooked with water then treated with yeast to ferment the sugar in the grain.
