Rice, Black Glutinous

Rice, Black Glutinous

Owes its colour to the layer of bran left intact and in spite of its name there is a small percentage of grains which are brown and a few which are creamy coloured. Under the black coat the grain is white, but because the colour runs when it is cooked, the entire mass becomes black. It is usually served as sweet.
