Pickles
Pickling was the original and most traditional way of preserving a glut of fruit and vegetables. In China, one method of preserving is to bury the vegetables in an earth trench (along a south facing wall) in layers with earth lying in between. The top layer is covered in earth and straw, and the buried vegetables are dug up at a later date and are as crispy and fresh as those eaten in the summertime. More conventional pickling also exists with vegetables being steeped in a sugar, vinegar and salt solution.
