Pickled Ginger


Pickled Ginger

In Thai cuisine this is served as an accompaniment to curries and works in much the same way as pickled garlic. In Japan however, pickled ginger is served with sushi or sashimi as a palate cleanser - it is eaten between bites of sushi. It is sliced wafer thin, and is usually pink in colour, although over time this can fade.
