Pho Soup
Vietnam's unofficial national dish. A beef broth served with white rice noodles with thin cuts of beef (often brisket) and fresh vegetable garnish. The broth is usually simmered overnight and made with beef (or other meat) bones, cinnamon, star anise, ginger, cloves and sometimes black cardamom. The rice noodles are usually freshly cut from a sheet although dried 'rice sticks' can be used too. Garnishes include spring onions, beansprouts, coriander, eryngo, Thai sweet basil and lime or lemon. These are often provided separately for the diner to adjust to their own particular preference. Pho is eaten at all times of the day, and is especially popular at breakfast, when it is at it's freshest.
