Pandanus
The leaf of the pandan plant. It has a wonderful perfumed smell and the leaves are dropped into rice when steaming and in curries for extra flavour and aroma. A famous Thai dish is chicken wrapped in pandan leaf, which is then grilled or fried. Also known as: pandan leaf, bai toey (Thai), la dua (Vietnamese).
