Pancakes
In Chinese cooking, pancakes fall into two styles; thick and thin. The thin pancakes, usually associated with duck, are made from flour and water and cooked in a frying pan. You can buy these ready-made at most Chinese supermarkets. The thicker pancakes are most popular in the north of China and can be filled with all sorts of ingredients. A popular filling is spring onions. They can be eaten as the meal itself or as an accompaniment. Pancakes also appear in Vietnamese cuisine - banh trang - summer rolls use rice flour pancakes that are softened in warm water and rolled up with a filling.
