Nameko


Nameko

A Japanese mushroom more often available canned or bottled. They have a distinctive, slippery coating on their small, rounded, honey-coloured caps and long, thick, paler curved stems. Add to Miso soups and simmered dishes or mix with diakon and season with vinegar, sugar and soy as a topping for the chilled tofu dish nameko-doufu.
