Matsutake
A seasonal mushroom and delicacy in Japan, its appearance in September heralds the coming of autumn. The gathering of these fungi from the red pine forests around Osaka and Kyoto is a gastronomic as well as social ritual taken very seriously by its participants. These mushrooms are only available fresh. They are rare and difficult to obtain.
