Lychees


Lychees

The spherical, pinkish-red, thin shelled fruit are about 4cm in diameter. Firm transleucent white flesh encloses and elongated, dark glossy seed. Easiest to peel starting at the stem end, the bumpy shell belies the smooth, tart flesh it conceals. The flesh of the lychee is sweet and clean with the slightest hint of acidity. The texture is juicy and springy. Canned lychees are an acceptable substitute for fresh.
