Lotus Root


Lotus Root

The lotus is a flowering water plant and its roots are prized in South East Asian cuisine. It is a grey-brown rhizome, with swellings along its length and can grow up to 3m long. When peeled and sliced through, they resemble wagon wheels. In Thailand, young specimens are used in salads. They are stuffed, stir fried or simmered in soup in China and Japan.
