Kaffir Lime
The dark green rind of the kaffir lime is used in Thailand and other South East Asian countries to give a heady and incomparable perfume and taste to dishes. The lime has a knobbly rind and an almost juicless pith. Put a lime in the freezer and it will keep indefinately- it will also be easier to grate. Also known as: porcupine orange, makrut, som makrut, makroot (Thai).
