Jaggery
Dark, unprocessed brown sugar derived from various palams (palmyra) or from sugar cane. Sold in cakes or in a liquid form. It has a caramel taste with the flavour of molasses present. In Thailand it is used chiefly in the balancing of flavours in hot curries. Also known as: palm sugar.
