Gluten
A vegetarian protein substitute. Made by washing a reasonable quantity of flour in hot water until the gluten 'heart' is revealed. They are the size of a pea and are chewy and flavourless. It is usually found in a sweet sauce, mixed with peanuts and canned. Only available in selected Asian supermarkets
