Chilli Oil


Chilli Oil

Vegetable oil is heated to smoking point, then left to cool. Chillies are added to the pan, along with other seasonings such as garlic, red onion and salt (if desired) and then left to cool and infuse overnight. Sichuan style chilli oil is just made with chillies and then strained before use. It is used as a dipping oil or as a component in Chinese dipping sauces. In Thailand, chilli oil is used to garnish dishes such as tom kha gai soup. Also known as: layou (Chinese).
