Chilli Bean Paste
Chilli bean paste is made with broad beans rather than soya beans. The beans for the most superior pastes are grown in the heart of the Chengdu plains, located in the Sichuan province. It is made in earthenware tubs using broad beans, fresh red chillies, plain flour, salt and water. It is a reddish brown colour and is speckled with chilli seeds. Also known as: Toban jiang (Chinese).
