Cepe
These are king of the edible toadstools sold dried in Western delicatessens as funghi porcini.
These fungi have tubes rather than gills on the underside of their caps.
Eaten blanched in Thai salads and in northern Thai soup with acacia leaves and bamboo shoots. Also known as: cep, porcini (Italian).
