Bitter Gourd/ Melon
Long, green and knobbly they have a bitter taste due to the natural presence of quinine (an anti-malarial substance). It is often stuffed. Also known as: Bitter cucumber, balsam pear, fu gwa (Chinese), niga-uri (Japanese), mara (Thai), kho qua (Vietnamese).
